Eggplant - Solanum - Edibles

Eggplant (Solanum melongena), also known as aubergine in some countries, is a versatile fruit that is treated as a vegetable in cooking. It's part of the nightshade family, which also includes tomatoes, potatoes, and peppers. Eggplant has a mild, slightly bitter taste and a spongy texture that soaks up flavors beautifully when cooked. There are several varieties of eggplant, ranging in color from deep purple to white, and in shape from long and narrow to round and bulbous.
